I cant take the saddle I used on a strider off, I don't know if this is a bug or if this is supposed to happen.

That works as intended. Pigs act exactly the same. The only way to take the saddle from a strider or pig is killing it. It's sad, because there is no menu for them like horses, donkeys, mules or llamas.
