I was trading with piglins and, very frequently, after I gave them the gold ingot, or after they gave me the exchanged item they run away (It appears to be faster than how they usually run) and in some cases they run of cliffs or into lava and kill themselves.

After doing some testing, I am unable to reproduce - piglins do not jump off cliffs after bartering even if there are piglin repellents close. Please provide more details on how to exactly reproduce it.
