I have noticed that when you place down a villager profession block and remove it sometimes the villager will keep that profession even though I have not traded with it and also I dont have any other profession block near it. I am 95% sure that this is a bug

Maybe it is because it isn't the hour at which villagers go to work (you broke the his profession block when it was night time, almost night time or the start of the day) because when you break the block at that time, they will keep the last profession they had, even if you put different profession blocks.
I'm unable to reproduce. Make sure no other player has traded with the villager, this may also be caused by mods.
