Just... watch the videos. Using outdated resource packs leads to weird results EVEN WHEN THE PACKS ARE TAKEN OFF.
I applied an outdated pack in the nether (so I didn't notice the sun) in one world, then quit and made a new one, then the videos happened. I think the sun and skin textures swapped, but were still weird EVEN WHEN THE PACKS WERE TAKEN OFF.
We do not have enough information to find the cause of this issue.
