On Mac you have to hold ctrl + click to split stacks or place one item in the inventory but this isn't working. I can pick up whole stacks and do the "hold click to divide evenly" feature, but no splitting or single placement.

You have to right click using your mouse or trackpad.
You can turn this on in mouse/trackpad settings.
