[MC-191892] Villagers lost profession after server update

I updated from the latest snapshot to the official 1.16.1 version and now all my villagers lost their profession, even after turning a zombie villager who wasnt a nitwit he wont gain a profession.

Were you using any kind of mods or plugins in 1.15?

Are you sure that this isn't just a texture glitch? Have you tried trading with them?
