recently, I have been having issues on 2 worlds of mine, no cows sheep chicken are spawning, yet at night, skeletons zombies are spawning meaning that animals should be able to spawn but they don't, I'm having to travel long distances to get food.

Animals only respawn very rarely, you are supposed to breed them and not kill them all.
