Despite the fact piglins will no longer accept ingots from right clicking, nor they will get distracted by it, they will still pick gold ingots (and any gold item) from the ground if they happen to come across it. (and barter an item in exchange)
To quickly reproduce spawn a piglin with the following:
/summon piglin ~ ~ ~ {Brain:{memories: {"minecraft:admiring_disabled": {value: 1b, ttl: 5000L}}}}Drop a gold related item at the piglin's position.

This is not about picking items off the ground, but about admiring gold items. Piglins with admiring_disabled will not accept right click bartering and will not pursue gold from the ground. However it seems despite this if they come across a gold item on the ground by chance they pick it up, admire it, and barter with it, which goes against the name of the "admiring_disabled" tag.
This strongly suggests that this is a bug or oversight with their AI. Also, CanPickUpLoot would still allow them to equip non gold armours.
