Villagers will randomly change trades when they are assigned a job. Example: if a villager is trading mending, in a few minutes he will change his trade to blast protection 2. Although this issue doesn't happen after a villager has ranked up.

This issue is invalid, as only pure vanilla issues are accepted on the tracker (your issue could be coming from Optifine, we're not sure).
Have you traded with the villagers? If you haven't, that's the reason why (villagers switch their trades if they aren't traded with at least once). In that case, this issue is invalid, too.
