I play my brother's minecraft LAN world for some time.
I leave.
I join.
Inventory empty, all player data reset.
I check player data files.
There is only one relating to my account, my previous player file with the data for all my stuff has vanished completely leaving just thew new empty data file so I can't recover anything by renaming the files
If it means anything, the host has loads of data files that are seemingly created anew every time he save & quits

Yes, we are both using the same version of optifine.
Interestingly, I attempted to solve this issue by created a dedicated minecraft server and hosting it on our local network. However, when I leave the game and join back again my inventory and all player data is still reset.
Upon inspecting the player data files of the world the only thing I can consitsently see is: my player's dat file that should be loaded is always renamed to something not linked to the UUID I join with & a new empty dat file is there with the name linked to the UUID I connect with.

[media]The player it is affecting is the file that begins with "3a..."
It seems after I have left there is no playerdata file that will be read by the server and assigned to me. This is because the name of the file the server recognises as me has become a dat_old file for whatever reason.
Very very strange - this is an extension of MC-193198. Please follow the instructions in the moderator note on that report, as we really really need to see a log of this occurring.
By the way, if you have not figured it out, just renaming the corrupted files (the one containing all the extra numbers at the end) can restore the lost player data.
Are either of you using any mods like Fabric, Forge or Optifine?
