The piglin, and the zombified piglin it turned into exists at the same time for a brief moment when a piglin is zombified.
You can see this by waiting until a baby piglin tursn zombified right when it's running. This may take a while to succeed.

Can you still reproduce this issue in the latest release or snapshot? I cannot in 24w36a. If you can, please attach a video.
Here are my steps to reproduce this:
Tick freeze the game:
/tick freeze
Summon a piglin with a high
TimeInOverworld
:/summon minecraft:piglin ~ ~ ~ {TimeInOverworld:999}
Tick step by 1
/tick step 1
The zombie piglin will immediately convert, and both entities will not be present at the same time.
