The players projectile accuracy is affected by difficulty. Making it harded on easier difficulties to throw Ender Pearls, shooting bows, etc.
On peaceful this makes it harder to do anything with projectiles as the Difficulty Base float is 0 in peaceful, making the inaccuracy very high. Mostly noticable with Ender Pearls or snowballs as they fly everywhere when being thrown.

Someone in Twitch chat on a recent Ilmango livestream, mentioned something about a difference in starting a world in peaceful, and changing the difficulty to peaceful after the world was generated. I will try later and see if there what I can find.
I'm also unable to reproduce. There doesn't appear to be any significant difference between difficulties. Here are my test results:

I could not reproduce this. According to this video (https://youtu.be/aWdQmA6cAT8?t=156) this only occurs on servers, but I also failed to reproduce it on a vanilla server
