If I press control (my crouch button), when I then click, always my offhand reacts.
(left or right click)
If I'm mining with a torch in my offhand and press control, it will place the torch and not mine. I'm on a Mac.

What is your mainhand set to? Go into video settings to Skin Customization. There is an opinion called "mainhand".
