how is that an unreaslesed version it is a snapshot

The floating blocks you've shown within your screenshots is MC-219944, which was later resolved as "Won't Fix", and the strange "cuboid" shapes appearing underground is MC-237374, which was later resolved as "Works As Intended".

Please check if that's still an issue for you in the latest 1.18 development snapshot.
