I finally got some eyes of ender and expected to find a stronghold but the eyes of ender just lead me to nothing, no cave, no stronghold, no mineshaft. NOTHING. I even mined around everything and still found nothing.

We do not have enough information to reproduce this issue.

Please provide the following information about the world you are playing in as text. Attaching a screenshot showing them is not enough.
World Type:
"Default" if you have not chosen one when creating the world.
For "Superflat": Additionally provide the generation preset.
For "Buffet": Additionally provide the generator type and biome you have selected.
Additional generation settings (in case you changed them): E.g. "Generate Structures", "Bonus Chest", ...
Seed: Can be obtained by using the
/seedcommand and clicking on the message in chatCoordinates: Can be copied to clipboard by pressing
F3+C

If you're nowhere near a stronghold, the eyes of ender will not pick it up because they have limited range. If it can pick it up, it will float in the direction you need to travel. When you're getting very close to a stronghold, the eye will float above the location of the stronghold, and then go underground and add itself to the ender portal. You should at this point begin to dig down and you should arrive at or near the portal.
Thanks Helen for the info. but in the vod at 6:50:00 ull see the eye of ender is going somewhere so The Info you have gives has little to no significance at this time.
Generated the world in 1.17 and went to the given coordinates, the corner of the stronghold ist just a few blocks beside where the eye came down as you can see in the picture.

I suggest:
You first go to the location and look for the stronghold in spectator mode (if you aren't comfortable with that dig to 1374 47 -1675)
If no stronghold exist, please give us the version you generated the world in
Your VOD is 9 hours long, could you perhaps share a timestamp or clip of this?
