The cursor disappears inside the game and out of the game while running Minecraft on Mac OS. The issue started in 1.17 and persists in 1.17.1.
After some additional testing, it appears that the cursor does not reappear when I Command+Tab or Control+Left Arrow to another app while the cursor is invisible in-game, and once I've done this, the cursor does not become visible in-game again when I return to the game and open a menu or UI that would normally display it. If I press escape to go to the menu or open a UI such as the crafting table or chest before switching to another desktop or app, the cursor stays visible. I have also discovered that I can bring the cursor back both in and out of game by opening a UI in the game, moving my cursor to the top of the screen to show the OS menubar, and left-clicking once.

I disagree. Having read that entire issue, it describes entirely different behavior than what I am describing. That issue concerns multiple clicks being required and the cursor being visible when it should be invisible, and this one concerns the cursor being invisible when it should be visible. Furthermore, that issue describes behavior that has been around for years, whereas this behavior is new as of 1.17.
I have also included a workaround in my description of this issue, which is different than the workaround described in MC-145948.
