While strip-mining, when I turn around to head home, far in the distance, where the tunnel hadn't loaded yet, I can sometimes see a strange texture, or the textureless purple square, instead of black emptiness or fog.

I think what's happened here is that you've experienced MC-155379. Due to the long tunnel, the distance chunks cannot be loaded allowing you to see the moon/sun. Occasionally, the moon/sun can render as other things which would explain the weird textures that can be seen.
