This is an issue with your resource pack.

As you can see by the other screenshot, i am using the default texture pack

I have reproduced this in 21w05a, but with a llama's texture and in the creative inventory. I attached a screenshot with F3 enabled, and I was using default textures. This bug seems to be very rare.

How to repcoduce (notice, this is most likely not the only way):
We have to reload the assets a lot. Have done this with datapack selection menu, but we can assume it may also occur after a lot of resource pack reloads, however this needs to be confirmed.

I'm writing about that as it'll maybe help fixing the issue.

I experienced this bug in a case in which the server sends a malformed server icon. In this case, the piglin texture is shown as a server icon. The following messages show up in the client's log with the last of them being written every rendering tick:

[14:54:11] [Render thread/ERROR]: Invalid icon for server Minecraft Server (localhost)
java.io.IOException: Could not load image: Image not of any known type, or corrupt
