We do not have enough information to find the cause of this issue. Please force a crash by pressing F3 + C for 10 seconds while in-game and attach the crash report ([minecraft/crash-reports/crash-<DATE>-client.txt|https://minecrafthopper.net/help/guides/finding-minecraft-data-folder]) here.
Once attached, the report will be reopened automatically.
I have reproduced this in 21w05a, but with a llama's texture and in the creative inventory. I attached a screenshot with F3 enabled, and I was using default textures. This bug seems to be very rare.

How to repcoduce (notice, this is most likely not the only way): We have to reload the assets a lot. Have done this with datapack selection menu, but we can assume it may also occur after a lot of resource pack reloads, however this needs to be confirmed.
I'm writing about that as it'll maybe help fixing the issue.

I had a similar issue, with my survival inventory having the Cubecraft server icon on the top left corner, and the Cubecraft server icon on the servers list being the texture of the inventory with the Cubecraft icon on the corner, really weird (No resource packs active)
It happened once, when closing and opening the game everything was back to normal.
This possibly happens because RAM space for texture pointers unexpectedly became small, causing other pointers to run into other. I think the only way to fix this is to move unused RAM space and make them used for texture pointers.

I don't see how this is related to MC-165967. Textures not having been updated is not an issue here; I've had textures change during gameplay to other ones, downloading has nothing to do with this.

I was able to reproduce this behavior in 21w43a. At the time of when I was experiencing this issue, I manually triggered a crash and have attached the crash report to this ticket in hopes that this will somewhat assist in determining what the problem is here. 🙂

I encounter wrong textures (Bookshelves became TNT on one side, Stone Bricks became black. stained glass wrong color) everytime I load in my world, no matter if I'm using the original texture or a texture pack. The textures return normal after reloading them by switching packs (For example, if I want to use the original texture, I need to switch from the original texture to a pack and back to the original)

This is a graphics card issue. Your texture buffer is too small, causing a buffer overflow. As a result, this is not fault of Minecraft, because there is no such code that causes this. It cannot be reproduced at all on my GPU. I think this issue should be invalid.

The sun flickered for a bit before settling into this texture.
I also remembered deleting the world icon after game bootup and joining the world (the one where I deleted the world icon) and then deleting the world icon again and then rejoining the same world again.

I can tell you with 100% certainty, they're not; they actually happen without being explicitly done with resource packs.

My suspicion for this is that it is an issue within the graphics card, potentially due to VRAM not being refreshed/cleared correctly. I'm not sure whether Minecraft can interface directly with VRAM like this, but if it can, it might help to check its interfacing code. This is an issue that I have seen and heard of happening in other games and on non-PC hardware, such as in "retro" games on consoles from the '90's and prior, and it almost always can be traced back to VRAM getting mismanaged.

I've not experienced this issue myself, but a few people from my community have.
After one person managed to fix it by switching to a 3rd party launcher, I realized it was because that 3rd party launcher does not have a built in/bundled Java and they had to have their own Java manually installed to use it.
I told the ones with the issue to manually install Java and set that one in the official launcher instead of the bundled one, and sure enough they all stopped having this issue.
For anyone still experiencing the issue, I suggest giving that a try. If it fixes the issue, let Mojang know here so they'll know they need to update their bundled Java version.

This is by far the weirdest bug i have seen. The way i solved it was to restart the server and my game and it worked. My version was 1.19.3 with no texture packs so this isn't a resolved bug
