Things on screen disappearing in 1.17.1 (Reproduced In Vanilla)

I made a report on 7/23 and was asked to reproduce this issue in vanilla, so here's the updated version and description- While playing multiplayer and singleplayer, I experienced several incidents where parts of my screen within Minecraft were disappearing as pictured below. hearts, food bar, and random things popping up on screen. Items also switch to random things visually, though they act the same as the original item. Lastly, something I found funny was that random skin maps were under some animals and the animals where changing. The pictures are of a small group of sheep I found, which you can barely tell. I have switched versions and this only affects 1.17+ at the moment. Screenshots provided are in a brand new unmodded vanilla world. If you have any additional questions please let me know, thank you.
