As noted in the Wikipedia article for beetroot, as well as the Oxford Dictionaries entry, "beetroot" is the British English term for what is referred to in US English as "beets".

I'd like to request a review/reopening of this ticket due to it being a notable inconsistency. Minecraft's source language (which is English, US) always spells words in American English and follows typical English, US spelling rules. Beets are generally referred to as "beetroots" in other English-speaking countries/languages, such as British English, and having this word spelled the way it is at this moment in time, introduces a linguistical inconsistency. Furthermore, considering how the triaging of MC-250194 is considered to be a value issue by Mojang Studios themselves, this reinforces the fact of how words within Minecraft's source language should be spelled in American English.
I'm not sure that it's so clear-cut: Merriam-Webster(link) states that the word is used in the US, albeit rarely, and cites an example of its usage from Forbes, a well-known American magazine.
