Minecraft doesn't play well with display scaling on PopOS. It displays as much smaller than the rest of the UI and it's hardly readable/usable. It returns back to normal when using 100% scaling. Minecraft also sees the screen resolution as much more than it really is. My display is 1920x1080.
The way PopOS does scaling is it tells all the windows to scale themselves by 200%, then the PopOS shell downscales everything to 125%. What I think is happening is Minecraft doesn't double it's scale, but PopOS still downscales it anyways.
I understand this more conceptually rather than technically. My solution would be having Minecraft double it's scale, or it could somehow communicate to the PopOS shell not to downscale it. That last solution isn't perfect, but at least the game would be usable.

I dunno, maybe report this to PopOS, as Minecraft doesn't actually have much control over all of that.
