Bug in the F3 menu that displays the wrong biome with a height difference (here, we go from the lush cave biome to the taiga biome which is just above if we are not even raised by an entire block which has no sens )

This happened to me too but with a bamboo jungle biome.

That's because 2 biomes cannot appear in the F3 screen at the same time, this works as intended.
