Experience is not collected when clicking on smelting recipes (maybe because it 'bumps out' the items already there and doesn't check for player interaction).
Replication:
Begin smelting items in furnace
Wait for some/all items to smelt
Click on recipe book
Click any smelting recipe
The items in the furnace will return to your inventory, but no experience is gained from the smelted items. No experience sound is heard either.

You do not understand i'm afraid, there is a misconception. I understand the pictures i provided show low amounts of items being smelted and thus no experience would be gained. But the issue is that experience should be gained when a large amount of items is smelted and collected. Instead, when a smelting recipe is clicked and the items are 'pushed out' of the furnace interface and into the users inventory with no experience gained, even though the items have been collected.
I understand this is a minor issue and not really one that affects game play, but it is an issue nonetheless.

This isn't an issue. Experience isn't always awarded when smelting items there is a chance that you get experience when smelting.
