I discovered an Iron Ore Vein that only spans around the size of one chunk. (Ore Veins are supposed to span many blocks and contain many blocks of ore)

This is essentially request to make ore veins larger. All world generation recommendations/request should go to feedback
It really isn't. I'm pretty adamant ore veins aren't meant to be this small. Typical ore veins can house around a thousand ore blocks - at the very least - a couple of hundred. This one had less than 15.
Large ore veins are large on average. But only on average, so sometimes you will be unlucky and encounter an extra small one. Similarly, you could get lucky and encounter an extra large one.
I've resolved this as invalid for the reason henrik mentioned above; also MC-236907 is very similar and has been closed by Mojang as "Won't Fix".
From what I know, ore veins work on a similar 3D-noise based system as biomes so in rare circumstances you just might get unlucky and get a 3D noise that's just above the threshold but only for a very small area.
