The Bug:
Throughout the game, the ears of many entities aren't mirrored.
Below, I've constructed a table that highlights all of these errors. Please note that there may be more entities affected by this that aren't listed below.

Download the attached resource pack (if necessary) to make testing this much easier.
Summon any of the entities listed above, for example, a donkey.
/summon minecraft:donkey ~ ~ ~ {NoAI:1b,Silent:1b}
Look at the entity's ears closely.
Take note as to whether or not the ears of many entities are mirrored.
Observed Behavior:
The ears aren't mirrored.
Expected Behavior:
The ears would be mirrored.

can confirm 🙂
I recon this also affects skeleton horses, but those have no texture applied in the default resource pack.
