[MC-259407] no trims or new menu

the new update doesnt add trims for me nor does it add the new ui for the smithing table, i am using the newest update and im using java

Not a bug. When creating a new world in the newest snapshot, you must enable the experimental 1.20 datapack in the world creation settings to access the new features listed above.
