[MC-262013] Inconsistent labeling of Minecraft on macOS: game window displays version, while application list & dock shows 'java'

On macOS, the Minecraft game icon is labeled as "java" in the application list & dock, even though the game window itself displays the Minecraft version number (the real title) in its title bar. This inconsistency could potentially cause confusion among users. It would be better if the application name and version number were consistently displayed to ensure clear identification of the game.

Affects 24w11a; this is a regression of [MC-44649] (assuming that issue was actually fixed, which I'm not sure it was). When fixing this I would also suggest renaming the launcher app to "Minecraft Launcher"; currently it's just "Minecraft", which is very misleading.
