Sprint doesn't turn off unless I press or let go of ctrl when my character comes to a complete stop in Java, my character only slowing down due to hunger or slow effects. However, If I change the value in controls from hold to toggle, or toggle to hold; my character does stops sprinting.
Sprint doesn't turn off unless I press or let go of ctrl when my character comes to a complete stop in bedrock version as well, however unlike in Java, bedrock version seems to have sprinting set to also either stop or have its value reset when sneaking is pressed, returning the character to walking after sneaking if turned off. However, unlike this in JAVA sprinting value does not reset via sneaking, as if I had sprinting enabled directly prior to sneaking, as in JAVA my character returns to sprinting when I stop sneaking.
In relation to this noticed difference of control between versions; In JAVA when after sneaking that my character is instead directly returned to sprinting, if sprinting was active directly prior to sneaking, then the character is often instead sprinting at slower speeds, than the speed it was sprinting prior to sneaking as well. I can't find any additional common factor to constantly recreate this last part of the problem though, it seems to just be very likely to happen and then sometimes it doesn't happened at just seemingly random times. In Java if sprinting at a slower speed due to the value not properly changing due to this, by changing the value of toggle/hold within the controls menu, seems to provide a temporary fix to both reset both the character to walking & the sprint speed value, until the problem occurs when players have return from sneaking and/or refilled their hunger to directly sprinting again.
I have used both my laptops native keyboard & an external usb keyboard to test this.

No not resolved, Community Support was unsuccessful at solving troubleshooting this bug. Community Support suggested me do a fresh install of Minecraft launcher and game versions, which does not fix these sprinting problems that occur within JAVA.
