When using a mace to reduce vertical momentum while swiftly turning during a fall, attacking an entity can impede camera rotation. This issue is related to MC-268998. In the video, despite attempting to turn right, attacking the giant caused the camera to revert back to the left.
steps to reproduce
/summon minecraft:giant
(Although I understand that giants are unsupported mobs, this issue can be replicated with any other mob. I'm simply utilizing giants because it's easier to reproduce this behavior with them due to their larger hitbox.)
/attribute @s minecraft:player.entity_interaction_range base set 64
Look at the giant
Swiftly strike the giant with a mace and adjust your camera angle
It may require several attempts before you can easily notice it.
Observed: Occasionally, your camera movement is reset.
Expected: The momentum reset should have no impact on the camera rotation whatsoever.

When trying to follow the steps to reproduce, I couldn't seem to get any unnatural camera movement:

Video is full speed, the game is slowed down to a tick rate of 2 to make the issue easier to reproduce.
As mentioned in the description this can take a few tries. There is already a video showing that the issue exists. It is probably best to set the Confirmation Status to plausible. I recommend reproducing it using a regular tick rate. (Might work with lower tick rate too.)
Additionally, in the video, you (@unknown) commence rotating the camera after attacking the giant. Hence, you evidently cannot reproduce the issue. It's essential to attack the giant while simultaneously rotating the camera.

In order to reproduce this, I believe you may have to increase you're sensitivity, this makes it easier to attack the giant while rotating the camera.
@unknown Yeah that is the correct way of reproducing it I believe, his camera rotation was a bit faster, but still correct.
Please update the description with steps to reproduce this issue and expected VS observed results. Please also upload a new video showing this, rather than 3 seconds of footage.
