The bug
Using the control key alongside the pick block functionality will cause any targeted block with NBT data to be copied with that data stored as item components. It is not possible to rebind the control-key part of this functionality to another key - it does not follow the button assigned for Sprint, nor does it have its own dedicated entry in Key Binds.
How to fix
Allow it to be rebindable, somehow.
