Items that have been stackable will now sometimes take up a new slot when put in a Crafter. For instance, I have a Pumpkin Pie farm, and even when the value of an item in a Crafter is stackable (for example, 7 pumpkins or 5 eggs) it still takes up a new slot in the crafter at seemingly random times. Is this an intended feature or a bug?

Thank you for your report!
However, this issue is Working as Intended.
The report you have submitted is working as intended: see the 23w42a changelog.
Crafter interaction with other blocks
Moving items in from another block (ex: Hopper, Dropper) prioritizes filling items into slots following these rules:
Prioritize the first empty slot (from left-to-right, top-to-bottom)
If there are no empty slots then prioritize the smallest stack of the same item (pick the first if there are multiple)
Please note, that mechanics of the game may change between updates.
Things such as graphics, sounds, world creation, biomes, redstone, villagers, and animals may not work the same in current versions.
