I can't get out of boats or mine carts in Creative or Survival. The only way to get out of a mine cart is to get into a boat and set the boat on fire. You cannot get out of a boat that is in the water unless you crash it.

A message shows up everytime you mount an entitiy on how to dismount it!

What are you doing to dismount? The new dismount is L-Shift. I got freaked out by this at first, as well.
