When I pause/enter inventory, the game completely jams. This has never happened before. Also, if I try to enter fullscreen, the game starts to flash from a black screen to the game back and forth in rapid succession.

Please upload a video recording of this issue, with the debug screen (F3) enabled before you pause the game/enter your inventory.
You can record your screen using software such as OBS or, on macOS, the built-in Screenshot app (shift+cmd+5).
