To my knowledge this bug effects the following:
Horse (saddle & armour)
Donkey (saddle & chest)
Mule (saddle & chest)
Camel (saddle)
Skeleton Horse (saddle)
When the player is mounted to the given animal, by pressing shift then e in quick succession (dismount bind and inventory bind) or vise versa (e then shift), the player is able to access the animalsβs inventory removing and equipping the saddle, armour or adding/removing items where applicable to each without being mounted (the UI windows still hold full functionality & keeping the information changed/made in that state).
Steps to reproduce:
Mount the animal
Press Shift (to dismount) and E (to open the inventory) in quick succession, or vice versa E and then Shift
The animalβs inventory UI will remain accessible and functional even after dismounting
The player can equip or remove the saddle and armour or add and remove items from the chest whilst not being mounted.
Expected Result:
Once dismounting the UI closes regardless and is unable to be opened without mounting
Actual result:
UI is still accessible and functional without being mounted
Side Note: Similarly to other UI models in Minecraft if the Camel moves too far from the player the UI will automatically close.

After consideration, the issue is being closed as Won't Fix.
Please note that this is not the same as Working as Intended, as this bug report correctly describes behavior in the game that might not be the intended or desirable behavior, but it will not be fixed right now. Sometimes, this is because the issue reported is minor and/or impossible to change without large architectural changes to the code base.
