When the “see_through” property of a text_display is set to 0/false:
Any tile entity like chests, beds, shulker boxes, … WON’T render behind it.
Clouds will also not render behind
As of now those are the only things I noticed that won’t.
When the “see_through” property of a text_display is set to 1/true:
It will not render on top of tile entities like chests, beds, shulker boxes, …
It will be translucent with clouds, you will still be able to see the text display, but the clouds will remain visible through the TEXT. These are the only ones that behave this way.
