Using most "hold to use" items plays the item bob animation immediately, instead of when the item is consumed (meaning never if the item is not consumable). This affects:
Food and drinks
Bows and crossbows
Any item which can block
Goat horns
Tridents
Brushes and spears are not affected.

I believe this issue first appeared when the item bob animation was added in the 1.9 snapshots, and that, being related to the combat update, it is not present in Bedrock Edition.
On the undesirability of the present behavior
The most serious problem this causes is that blocking with a sword (with the blocks_attacks component) does not look the way it did pre-1.9. The other impacts of this issue are more minor but are still undesirable; I’ve never heard anyone express appreciation for the present behavior, while I’ve heard several people express dissatisfaction with it. It should also be pointed out that this animation is strictly a first-person thing, and beginning to block with a sword, draw a bow, etc. is already an instantaneous transition in third person so it would make sense for the transition to be instantaneous in first-person as well.
If this report is resolved as WAI or Invalid it would be appreciated if Mojang would explain why spears and brushes in particular are not subject to this issue.
