Steps to reproduce:
Setup a test area with a moving mob, for example a zombie running towards a villager.
The movement is important, itβs either required or increases the chances of it happening by a lot.
Throw a projectile (egg/snowball) at the mob. (center vs edge of hitbox does not seem to matter)
Repeat this until the projectile passes through the hitbox (+- 10% chance per projectile)
Expected Result:
Projectile either hits or bounces off entity.
Actual Result:
Projectile passes through mob, even able to hit a mob behind it.

Hitbox size has no, or a minor effect on frequency.
I remember this happening with a bow in pvp, back in 2023. This is likely that same old bug.
