The Lunge enchantment on the new spear can be exploited in multiplayer when used with an elytra to gain extremely high air speed without consuming any hunger. This behavior appears unintended and allows unlimited propulsion, effectively replacing fireworks and a Riptide trident.
Environment
Minecraft Java Edition 1.21.11, multiplayer vanilla server, no mods or plugins, macOS.

Attempting to replicate this (around 1:10) results in normal hunger consumption, even with an elytra. I’m unable to replicate the behavior in the description.

The media you linked takes place within a Fabric server (note at 0:17, upper right corner), not a vanilla server like previously mentioned. Can you create a fresh vanilla server and try recreating the steps within it?
Thank you a lot ! I didn’t knew it was a fabric server, since we din’t have any mod… im gonna retry on a vanilla one then
