The zombified piglin's snout has a 10×4 pixel texture which is clearly designed for a 4×3×1 model. However, the actual snout model is a 3×3×1 cube, which would require an 8×4 pixel texture. As a result, the snout's UV mapping doesn't cover properly the snout texture. In-game, this is particularly noticeable as it causes one of the nostrils to appear on the side of the snout instead of the front.
