When speaking in chat in peer-to-peer multiplayer, I can see my friend’s messages but can’t see my own. They can see mine but not their own.

Is your “Others can communicate with voice, text, or invites” Xbox setting set to “Everyone”? You can check at https://aka.ms/MinecraftJavaXboxPrivacyAndSafety .

The snapshot blog says about this known issue:
“If your Xbox profile chat setting is set to "Friends Only", you cannot see your own chat messages“
I’m not sure if it is due to that, but if it is, you should check if known bugs need to be tracked here or not.
