I have a survival world on the latest snapshot, and I update that world every wednesday, and I was doing a trading hall with a zombie when all the trapdoors and levers change their status, there wasn’t any redstone connected to them

However, this issue is Invalid.
This report does not describe a bug.
Redstone power opens and closes trapdoors. Switching a single dot of redstone to a cross changes the blocks affected by it.

Additional context regarding the pattern:
The issue seems to be related to world tick updates or chunk loading/saving desynchronization in the recent snapshot.
It happened under three distinct circumstances:
Right after performing a world backup (heavy saving task).
While actively building in an unfinished area (frequent block/light updates), causing multiple unpowered trapdoors to flip simultaneously.
Randomly with levers changing their block state (powered: true/false without any player interaction.
It appears that background server/world lag or internal sub-chunk updates are forcing mechanical blocks and power sources to reset or glitch into wrong states simultaneously.
