If you eat food which has a map component, the held map will remain fixed in position for some reason. This is in contrast to when eating food, in which case the held object will move up and down.
Command to give yourself an edible map: /give @s minecraft:golden_apple[minecraft:map_id=0]
To reproduce, try eating this. Expected result would be for it to bob up and down vertically like food, but we can see this does not happen.
