All textures, including player skins are invisible when in-game. Menu works fine, messages on signs work fine, but they load for about half a second then all disappear. I can see the sun, sky, clouds, box around blocks just not my hand, I can also see SOME items I'm holding, which seem to be items, not blocks.

Do you have forge and optifine installed at the same time?

Duplicate of MC-47174. The beta AMD drivers are problematic, and you should downgrade them to correct this issue.
Not sure which version # you're looking at, but the screen shots look like a duplicate of MC-47174.
Also, you should update your Java to 1.7.0_51
