When I fall on a wheat plant, it turns back into a seeds and the farmland turns back into regular dirt. Then I have to use my hoe to retill the dirt and then replant the seeds. It seems to occur less often with more mature wheat plants than with young ones.

Any farmland will turn back into dirt if you or a mob jumps or falls on it. Any plant (wheat, carrot, etc) will uproot.
It has been a feature for quite some time, and had bug fixes around it protecting the functionality. As to the "point", I can only assume it adds some uncertainty and a requirement to protect your farmland, as well as giving a continuing purpose for hoes which otherwise would be used only a single time to make your farm (other than expansions). Mojang doesn't make any statements on the "point" of the game, it is a game. Neither does almost any other game developer I'm aware of...
This is an actual feature that jumping on wheat de-plants it and turns the farmland into dirt.
