You can no longer give yourself water, lava, or fire, as these are technical blocks which were removed in 1.7. See http://minecraft.gamepedia.com/Technical_blocks
Blah: If they were removed in 1.7, why were they obtainable in 1.7 version and in last 1.8 snapshots, except this?

Some block types are only used internally and won't have an item anymore.
I can confirm, if you type
/give @p minecraft:waterit prints out "There is no such item with name minecraft:water" although it's in the tab complete
