When a chicken gets into water, they somehow freeze and don't get out anymore. Even with seeds in your hand, they do look at you, but will not follow you.
In my found cases, the water was only one block deep.
Also the chickens where full grown.

I can't replicate freezing. I can get chickens to swim painfully slowly, but they definitely swim.
