I spawned a horse. It came out as a pony, so I fed it a hay block. I tried to mount it, but I just couldn't. The horse wasn't throwing me off and neighing. The camera would just reset.
I spawned another horse (an adult one) and I was able to mount it just fine.

Yeah, I fed it only one, because I assumed that'd be all it took to make it an adult, and the fact that it immediately started looking like one didn't help. When I went back into the game, I noticed that it had turned back into a pony. I fed it a few more hay blocks and I was finally able to mount it.
I hope this bug gets ironed out soon.
Did you only feed it 1 hay block? There is currently a bug where, when horses age, they instantly look like adults. You probably need to feed the horse more before being able to mount it.
