In both Creative and Survival all sheilds are white even when the sheild is named a colour it still looks white.

Please force a crash by pressing F3 + C for 10 seconds while in-game and attach the crash report ([minecraft|http://hopper.minecraft.net/help/finding-minecraft-data-folder]/crash-reports/crash-<DATE>-client.txt) here.
What about banners ? Are those coloured ?

That didn't happen to me on my Windows 8.1. Will see on my windows 7.
EDIT: They were still coloured on my WIndows 7. Try updating your Java
