All items and blocks appear transparent when picked up. Gray-scale items, such as grass, appear gray as in their texture files.

Sounds like MC-92906, linking as related for now.
Can confirm this behaviour; seems to happen with all items, no matter what picking up. Vanilla minecraft with no resource pack.

I'll resolve all of these tickets as duplicate of MC-92906 - we were originally gonna leave them all open because it might be separate issues, but there's just too many reports coming in now.
Most likely the same bug. Let us know if the fix for MC-92906 doesn't fix this.
