Here's how to disable the beta launcher again:
If you switched to the beta launcher and can't log in, you can switch back by editing launcher_profiles.json in your minecraft folder. Change the "channel" field from "beta" to "release".

The bug
The launcher is closed immediately after being opened. I am on the beta channel. This is happening since the launcher has been released. Switching to the release channel by editing launcher_profiles.json
solves the issue.
I have attached the launcher log, as well as the native log.
To reproduce
Open launcher
Go to "Settings"
Enable beta versions
→ ❌ Launcher closes. When trying to open it again, it'll close again
